  • Slightly over 1 ¾ cups (230 g) all-purpose flour
  • 1/3 cup (50 g) bread flour
  • 1 ½ tsp salt
  • 1 tbsp granulated sugar
  • 2 ½ tbsp (35 g) soft, unsalted butter

For the Cheese Filling

  • 1 tbsp chopped fresh parsley
  • 2 cups (200 g) mozzarella cheese, shredded
  • ½ cup (45 g) freshly grated parmesan cheese

For the Garlic Butter

  • 3 ½ tbsp (50 g) soft unsalted butter
  • 3 tbsp parsley, chopped
  • Pinch of salt
  • Previously roasted garlic from above
  • 1 egg, beaten (for egg wash)

Note: Use fresh garlic for best flavor.

How to Make It

Follow these steps to create your delicious rolls.

Roast the Garlic

Prep Cheese and Parsley

While the dough proofs, chop parsley to obtain about 4 tbsp, and grate enough mozzarella to measure 2 cups (200 g) and ½ cup (45 g) of parmesan cheese.

Make Garlic Butter

In a bowl, mash together 3 ½ tbsp (50 g) soft unsalted butter, 3 tbsp fresh chopped parsley, a pinch of salt, and the roasted garlic until well combined.

Roll Out the Dough

Once the dough has risen, roll it out on a floured surface. Spread the prepared garlic butter evenly over the surface, then add the 2 cups (200 g) mozzarella cheese and ½ cup (45 g) parmesan cheese on top.

Cut and Shape

Cut the dough into 6 strips, rolling each one up individually. Place them into a prepared pan lined with parchment paper and let them proof again for 30 more minutes.

Bake the Rolls

Preheat the oven to 355°F (180°C). Beat one egg for the egg wash, then brush each roll with it. Bake for 25-30 minutes, or until golden brown.
